Hey guys, I've had a lot of people ask about the crepes I make on a regular.  I mostly make plain crepes and fill them with cottage cheese.  This is a traditional Polish food that many people put maple syrup on after baking (not me).  My favorite food hands down though is manicotti, not manicotti made with filled pasta shells from the store but real manicotti.  So since I had all the ingredients in my fridge I decided to make some for dinner tonight.  So directions are for manicotti but crepes are the same minus the seasoning for any filling (think berries, chocolate, nutella, cottage cheese etc).
For the crepes you need:
1c flour
1 1/2 c water
1 egg
dash of salt
dash of Italian herbs
Mix this all together and set aside.  Should be a fairly watery consistency.  If it is thick like pancake batter add a bit of water until it is thinner


For the filling
1 2lb container of Ricotta Cheese
1c shredded mozzarella
1/2c parmesan
2 eggs
Italian herbs to taste
Salt and pepper
Mix all together and set aside

Get your small crepe pan heated up on the stove, use non-stick spray to line a baking pan.
Once pan is hot, coat with non-stick cooking spray.  Use a 1/2 cup measuring cup to scoop crepe batter into pan and swirl around to coat pan evenly with batter.  Once the edges come away from the edge of the pan, flip it with a spatula.  Let cook on the other side for just a few moments.  Flip crepe onto a clean plate and spread a heaping table spoon of filling in a line down the middle of the crepe.  Roll the crepe up around the filling and place into the baking pan.  Repeat this until you're out of batter (or filling whichever runs out first I never run out of both at the  same time lol).
